The Craft Behind Your Morning Cup

There is something deeply satisfying about the moment coffee transforms. Green, unassuming beans enter our vintage Probat roaster, and through careful attention to temperature, timing, and intuition, they emerge as something entirely new. This transformation is what drives us each morning.

Our roastery sits on a quiet street in Zurich's Kreis 4 district. The aroma of freshly roasted coffee often spills out onto the sidewalk, drawing curious passersby inside. Some come once and become regulars. Others arrive as regulars, having followed us for years.

We source our beans directly from farms in Ethiopia, Colombia, Brazil, and Guatemala. Each origin presents its own puzzle. Ethiopian Yirgacheffe demands a lighter touch to preserve its floral notes. Brazilian Santos benefits from a slower development to draw out its chocolate undertones. Learning these nuances takes years. Mastering them takes a lifetime.

Why Small Batches Matter

Industrial roasters process tonnes of coffee daily. Uniformity is their goal. We take a different approach. Our maximum batch size is twelve kilograms. This allows us to monitor each roast's progression by sight, sound, and smell.

When beans crack for the first time, releasing trapped moisture, we listen. When oils begin to surface, we watch. This hands-on method may produce less coffee, but what emerges carries intention in every sip.
